Roman's Pupcakes

We lost Roman, our 9 year old english/neopolitan mastiff mix in February of 2018 to osteosarcoma. This is a nasty and aggressive cancer that spreads quickly. We are grateful everyday that we were able to celebrate Roman's 9th birthday with him! Below you will find the recipe for his birthday "pupcakes". Guaranteed to satisfy even the pickiest eaters, these little muffins are also nutritious and easy on your dogs tummy!

Roman's Pupcakes

Yields: 12 muffins
Prep time: 15 minutes
Cook time: 30 minutes

Ingredients:
"Cakes":
Ground turkey | 1 lb
Large eggs | 6
Brown rice, cooked | 3 cups
Turmeric powder | 1 tablespoon
Ground black pepper | 1/2 teaspoon
Fresh kale, chopped | 1 cup

"Frosting"
Pumpkin puree | 1 15oz can
Blueberries
Fresh green beans

Optional add ins: coconut oil, dried parsley, dried oregano, carrots, peas, any frozen veggie really.

Ingredient swaps:

Meat: any lean ground meat-chicken, beef, salmon, bison, venison...whatever works for your pooch!
Grain: quinoa, sweet potato (boiled), white rice, barley. Just make sure to cook them first!

Directions:

Set oven to 400° F

Combine all cake ingredients into a mixing bowl. Make sure everything is incorporated well. Measure into greased muffin tins*. (Don't bother using paper molds- the moisture in the mixture makes them break down. Silicone molds work really well though!) Bake at 400°F for 25-30 minutes until cooked through. Let cool completely.

To frost, I spoon the pumpkin puree right out of the can onto the cooled cakes. You can get fancy if you'd like--the pumpkin has a texture similar to a thick frosting, so you can pipe it on with a piping bag or zip top bag with a hole in the corner. Then place the blueberries and cut up green beans on top in whatever artsy way you would like! Mine didn't turn out very pretty ☹ but the dogs don't mind!

Serve either room temperature or chilled! The cakes last in the fridge for about 4 days, or in the freezer up to a month. 1 cake per medium pooch...smaller pups (and their humans) may prefer cake pop sized treats.

*if you add in coconut oil to the batter, no need to grease the muffin tin!

Not only are these cakes generally okay for sensitive tummies, the added turmeric and black pepper have antiinflammatory properties, which Roman needed to help with the pain his cancer was causing. I hope your doggies enjoy them as much as the pups at Rome's 9th birthday party did! (Yes, we throw doggie birthday parties...judge if you must).
